Pan-seared venison loin
Tender venison loin, seared to a medium-rare pink, accompanied by a dark sauce with chocolate and cassis, served alongside a delicate parsnip purée and sautéed Brussels sprout leaves.

- 20 gdark chocolate (70%)
- 50 mlcassis liqueur
- 400 mlgame stock
- parsnips, Brussels sprouts
- butter, cream, juniper berries

- 1Sear the venison loin on all sides, then cook in the oven at 120°C until the core temperature reaches 54°C.
- 2Deglaze the pan drippings with cassis, pour in the game stock, and reduce.
- 3Remove the sauce from the heat and stir in the chocolate.
- 4Boil the parsnips until soft, then mash with cream and butter to create a purée.
- 5Briefly blanch the Brussels sprout leaves and toss them in butter.

Respectful treatment of nature in the Taubertal is very important to us. We cultivate our vineyards close to nature and avoid herbicides. We are currently in the official transition process, which is why not all older vintages carry the organic seal yet, but we already work strictly according to ecological guidelines.

Do you also ship abroad (EU)?
