Igersheimer Grauburgunder

Ingredients

• 1,5 kgpork roast with rind (shoulder or belly)
• 500 mldark beer
• soup greens, onions, garlic
• caraway seeds, salt, pepper
• bread dumplings (ready-made or homemade)

Preparation

1. 1Score the rind in a diamond pattern. Rub the meat with salt, pepper, and caraway seeds.
2. 2Roughly chop the vegetables and place them in a roasting pan. Set the roast on top (rind side up).
3. 3Pour in the dark beer (avoiding the crust!). Roast in the oven at 180°C for approximately 2 to 2.5 hours.
4. 4Finally, switch on the grill function to crisp up the rind.
5. 5Strain the gravy and season to taste. Serve with dumplings.
