Braised Beef Cheeks with Celery Root Purée
Butter-tender, slow-braised beef cheeks served over a creamy celery root purée with an intense jus.

- 1200 gbeef cheeks
- 1celery root (large)
- 2onions
- 2carrots
- 500 mlbeef stock
- 300 mlred wine
- 80 gbutter
- 150 mlheavy cream
- bay leaf, thyme, salt, pepper
Preparation: 3 hours 45 minutes
Preparation
- 1Season the beef cheeks with salt and pepper, then sear them in a roasting pan until browned on all sides.
- 2Dice the onions and carrots, sauté them in the same pan, then deglaze with red wine and reduce.
- 3Add the beef stock, herbs, and beef cheeks, cover, and braise at 150°C for approximately 3 hours.
- 4Dice the celery root, cook until soft, then purée finely with heavy cream and butter, seasoning with salt to taste.
- 5Strain the braising jus and reduce slightly if necessary. Serve the beef cheeks with the celery root purée and the jus.

Treating nature in the Taubertal with respect is very important to us. We cultivate our vineyards in a natural way and refrain from using herbicides. We are currently in the official transition process, which is why not all older vintages carry the organic seal yet, though we are already working strictly according to ecological guidelines.

Do you also ship internationally (EU)?
