Bresse Chicken in a Creamy Morel Sauce

- 4chicken breasts (skin-on)
- 250 gmorels (fresh or soaked)
- 2shallots
- 200 mlchicken stock
- 200 mlheavy cream
- 100 mlwhite wine
- 40 gbutter
- thyme, salt, pepper
Preparation: 40 minutes
Preparation
- 1Season the chicken breasts with salt and sear in butter skin-side down until golden brown, then finish cooking in the oven at 160°C.
- 2Finely dice the shallots and sauté in the pan until translucent.
- 3Add the morels, sauté briefly, deglaze with white wine, and reduce.
- 4Stir in the stock and cream, simmer for 8-10 minutes until creamy, and season to taste with salt, pepper, and thyme.
- 5Slice the chicken and serve with the morel sauce.

Respectful treatment of nature in the Taubertal is very important to us. We cultivate our vineyards close to nature and avoid herbicides. We are currently in the official conversion process, which is why not all older vintages carry the organic seal yet, but we already work strictly according to ecological guidelines.
